They likely would do this so even if their missiles and drones were shot down the mustard gas (like they used (both sides) in the Iraq Iran war would harm people in various ways. this could already be happening and Israeli defense forces might not realize it yet fully. But, if mustard gas missiles or or nerve agents were shot down it might cause long term damage to Israeli citizens.
I think we have to be prepared for this type of thing in the missiles being brought down by the Iron Dome and Israel might also send mustard Gas or nerve agents into iran in cruise missiles or drones or missiles as well. However, hopefully this hasn't happened at least yet.
