Buying Tsampa in the U.S. , Canada or Europe
If you have been to Tibet or are familiar with the Tibetan Culture then you know for at least 1000 years the staple sort of (granola) used for long trips walking without refrigeration outside of snow in Tibet and throughout the Himalayas is Tsampa. Tsampa is barley that is first roasted so it it cooked and ready to eat. Then it is dried and ground up into a powder like flour. Then it is mixed with melted yak butter(or cow butter) until it is in a lump sort of a little thicker than peanut butter mixed with flour. If you look it up online you can see pictures of the normal consistency of tsampa ready to eat. I found through the internet a location where one can buy either white or purple tsampa through mahasidda.org a nyingma dharma organization in the United States. I ordered some white tsampa and some purple tsampa. Since I have been away skiing or to Las Vegas with my wife I didn't have time to try to mix some with butter to try it. I found the white tsampa with butter tastes as if I mixed peanut butter, cashew butter and popcorn in a powdery paste mixed with butter. That is the best way I can describe it. I found purple tsampa to be a little more bitter in taste but I guess that could be an acquired taste as well. So for my pallet white tsampa works better for me. However, if I was Tibetan it might be a different story.

Also, you can look up on Google Images "Tsampa" to see more. However, some of the images remind me more of Mo mos which are like dumplings filled with usually either curried potato chunks or meat like sheep or Yak or something else like that. The Tibetan Lama we traveled across India with often made us Momos for dinner with Tibetan Tea because they are a Tibetan STaple like Tsampa.
We often didn't know how to cook in India because everything available in 1985 and 1986 was quite different than in the U.S. So, things like Dhal Bhat and rice and curried potatoes were more the norm then as we traveled. Also, you had to be careful what you ate so as westerner you wouldn't get sick in various ways. So, no salads, no things like tomatoes but you could usually eat things like oranges without getting sick. Even so, after being there 4 months or more in India and Nepal 1985-6 there was only one of us as we flew back to San Francisco that didn't have Giardia. Giardia is having protozoas in your intestines and can cause over time (years 10 or 20) a hypothyroid condition and within 30 years auto-immune diseases if one doesn't give up all gluten immediately. I didn't learn this until march 2013 so I had already become hypothyroid and had to start taking armour thyroid tablets every day starting in 2008 even though I likely was hypothyroid since around 1990. So, people who travel the world often get giardia at least once (whether they have symptoms or not). So, getting a Thyroid t3 and t4 blood test if you are a world traveler is helpful.
Added 10-24-2021:
The other thing I have learned about is that Going Gluten free can be a problem if you have any blood sugar issues like I did which was likely also caused by Giardia too which caused my low Blood sugar problems along with becoming hypothyroid which means (your thyroid glands are not producing enough Thyroid to keep your hormones in balance.
What I learned when I went gluten free is that rice flour converts to too much sugar. So, when I ate Rice flour products as in pizza crusts and bread it upped my blood sugar in an unhealthy way and made me Pre-diabetic. I was very upset at learning this so I stopped being gluten free at this point and this was a better solution for me.
Even though I likely never will become diabetic because that doesn't run in my family at all, I still have to be careful not to drink fruit juices before I drive a car because it is for me sort of like Drinking beer or wine. So, I don't allow myself to have any sugar before I drive a car. So, any fruit juice or other sugar sources I only allow myself to have after or during dinner when I don't have to drive anymore that day. Fructose from fruit and juices can be difficult. I first realized this was a problem in Hawaii in 2015 when I went with friends to snorkel near Kona, Hawaii on the big island in January. The ocean water was 85 degrees in January which was amazing!
However, in January it's likely too cold to be happy without a wet suit on Kauai because it is the northernmost island. But, it's also true that Kauai stays cooler in summer too whereas the Big Island is unbearable in Summers without air conditioning because of humidity and heat.
Trying to stay healthy and alive is a full time chore I have found since I got to be around 40 or 50 years old. I constantly have to be thinking about: "What should I eat? and What kinds of exercise will be fun for me (which usually is hiking along the beach or in the redwood and pine and oak forests near where I live on the Northern California coast. I'm also hoping I will be able to ski this year also on Mt. Shasta if the conditions are right. I have to be more careful now because I'm in my 70s. But I still have good knees for skiing.
