This is sort of a concoction I came up with all by myself that I make for myself because basically the only cooking is boiling water for 12 minutes time and the cheese and butter basically cooks itself right in the bowl of pasta.
Here is what I do when I need comfort food:
I start with usually De Cecco Farfalle no. 93 which is one I like and likely is my favorite if I'm not making angels Hair pasta instead.
De Cecco Farfalle no. 93 is also sometimes called Bow tie pasta too because that is what it looks like before you put it in boiling water for 12 minutes is what I cook it for (it says 11 to 13 minutes (so to each his own)
I take as much as I want to eat into my bowl so I don't cook too much (my wife complains if I make too much and she or I don't finish it which I also understand. So, I try to cook Only one portion.
However, the two of us drove north from Santa Barbara today in two vehicles so she wanted a portion so we did 1 and 3/4 bowls of pasta (before it was cooked into the bowls it will be eaten in to get the right amount for each of us.
Then I usually boil the water in a kettle first because I'm very into efficiency in life so I don't have to watch the whole thing heat up to a boil and it shuts itself off automatically which is nice too.
Then when it boils I put all the dry pasta into the boiling water and when within a minute or two it starts to warm up enough to make the pasta boil I set a timer for 12 minutes on the stove.
Meanwhile I get out butter and grated cheese (whatever kind you like) and I start by putting in the bottom of the bowl I intend to eat this in first a pat of butter and then a small handful of grated cheese.
When the pasta has boiled 12 minutes with no lid on it so it doesn't boil over, I take a ladle with holes in it so the water drains off the ladle (but you could use any device you prefer to prevent being burned by the boiling water.
I usually don't drain the Farfalle simply because I'm going to eat it right then. So, I just use a spoon or other device that drains off the water from the noodles and put the noodles directly on the butter and grated cheese (your choice of type of grated cheese you like and I like butter myself instead of margarine because it tastes better and I believe it is healthier for you than synthetic things.
Then I layer one layer of FArfalle and then one layer of butter and grated cheese until the bowl is as full as I want to eat.
Then if I have spaghetti sauce sometimes I will open some kind of spaghetti sauce and pour it when I'm done layering with pasta butter and grated cheese until the bowl is full.
Because the noodles are so hot they melt the butter and cheese in a consistency I like and I often add real lemons that I cut or if I have some of that yellow bottled things of lemon juice I will do that instead if I"m out of real lemons.
You can alter this recipe to your taste but I think I should call this:
Bachelor's Pasta A La Fred.
Enjoy! if you are interested in trying a new pasta dish (A La Fred)
