The organically grown barley is washed twice and dried in the sun before being roasted to a pop over an open flame and ground in a stone mill. Also, you can look up on Google Images "Tsampa" to see more. However, some of the images remind me more of Mo mos which are like dumplings filled with usually either curried potato chunks or meat like sheep or Yak or something else like that. The Tibetan Lama we traveled across India with often made us Momos for dinner with Tibetan Tea because they are a Tibetan STaple like Tsampa.
We often didn't know how to cook in India because everything available in 1985 and 1986 was quite different than in the U.S. So, things like Dhal Bhat and rice and curried potatoes were more the norm then as we traveled. Also, you had to be careful what you ate so as westerner you wouldn't get sick in various ways. So, no salads, no things like tomatoes but you could usually eat things like oranges without getting sick. Even so, after being there 4 months or more in India and Nepal 1985-6 there was only one of us as we flew back to San Francisco that didn't have Giardia. Giardia is having protozoas in your intestines and can cause over time (years 10 or 20) a hypothyroid condition and within 30 years auto-immune diseases if one doesn't give up all gluten immediately. I didn't learn this until march 2013 so I had already become hypothyroid and had to start taking armour thyroid tablets every day starting in 2008 even though I likely was hypothyroid since around 1990. So, people who travel the world often get giardia at least once (whether they have symptoms or not). So, getting a Thyroid t3 and t4 blood test if you are a world traveler is helpful.
