Because once you go down this road to where everyone uses hydrogen for fuel you eventually use up all the water on earth by turning it into Hydrogen and oxygen and until there is no more water.
The problem is there is just so much water on earth and if you break it all down into Hydrogen and Oxygen once you burn the hydrogen you cannot then take that hydrogen and make more water. So, water is a limited resource even though you might get away with doing this for 1000 years eventually there would be no water left and no way to make more once you burned up all the hydrogen from water.
