If it is just two people then renting something like a Mustang convertible or Camaro Convertible likely is possible. However, when my wife and I were just traveling alone like this often I had to put our luggage upside down in the back seat of the convertible because the convertible roof takes up too much room in the trunk space unless you put the roof up for rain or something. And one of the most amazing rides we took was on Maui on the Road to Hana which I found allowed me to take the corners fairly fast and so my wife and I thought this was one of the most amazing rides we ever took in a rented car in Hawaii. I think we have rented convertibles on Maui and Kauai and on Oahu over the years.
However, if there are 3 or more people (we often travel with 4 or 5 of us to Hawaii) I find that renting a minivan something like a Dodge Caravan to be more practical (if you want to only rent one car). So, a minivan I have rented on the Big Island of Hawaii and on Maui and on Kauai over the years and find it is the best for 3 or more people because it will fit all your luggage as well as all your bodies relatively comfortably.
Also, I find it easier to go snorkeling or on day trips with a minivan. It's also possible not to rent a car if you are the kind of person less adventurous who ONLY wants to stay at a resort too. It all depends upon what you want to do while you are in Hawaii.
