I was wondering why the Comte de Saint Germain passes away in this one. I realized that since Gabildon has a scientific education she was trying to illustrate what happens to people who are scientists in the 1700s. One was a healer and a medicinal specialist and the other was interested in science also in a slightly different direction.
So, what she was illustrating was how many people died trying to discover scientific things because most people (including the King of France) were very ignorant and superstitious and so many people on a scientific bent died.
So, the reason she had the Comte de Saint Germain die was because he was doing what we are doing now. He was searching for the truth as a scientist and was killed for it in "Outlander".
But, in history the Comte de Saint Germain did not die in 1744 when Claire's Baby "Faith" dies, he lived until at least the late 1700s if not much much longer. So, it is to illustrate the sacrifices people of science and medicine went through and actually died very often at the hands of royalty who then were relatively ignorant and superstitious compared to science and medicine now here in 2016.
