I was searching for this information but I couldn't find what I was looking for easily on the Internet somehow. Not sure why this is.
Anyway, I have talked to friends who made a study of this and they told me that when it first went to Europe it was expensive and thought of in a similar way to how we think of Cocaine today because it was in a white powder form and it severely altered behavior (for example the sugar skitz) of children. Just feed your children a lot of sugar and watch them destroy your house and yard for example, and go completely crazy.
Imagine when people didn't have immune systems developed or mutated for sugar at all. I could see how some people might even die from eating sugar at the time. All sorts of aberrant reactions happened and only in the first instances was this even eaten except by the richest of the rich like Kings and princes and princesses and courtesans. So, it started sort of like an expensive drug like Cocaine. Then it was mixed with Cocoa in the form of Hot Chocolate which became all the rage in Europe and it all has moved on from then. But, at first it's effect on people was more like the way you see it affecting children now. It made them completely crazy until it wore off later that day or evening. So, mostly adults ate sugar in various forms because it made people laughing and nuts mostly so this was considered an adult pastime for this reason.
